3 cups frozen hash browns, thawed

1/4 cup unsalted butter, melted

1 cup fresh spinach, chopped

1 cup cherry tomatoes, halved

1/2 cup cooked bacon or sausage, crumbled (optional)

6 large eggs

1 cup whole milk

1 cup shredded cheese (cheddar or feta)

1 teaspoon garlic powder

Salt and pepper to taste

Fresh herbs (chives or parsley) for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Hash Brown Crust: In a medium bowl, mix the thawed hash browns with melted butter, salt, and pepper. Press the hash brown mixture evenly into the bottom and up the sides of a greased 9-inch pie dish to form the crust. Bake in the preheated oven for 20 minutes or until golden and crispy.

      Cook the Filling: While the crust bakes, heat a non-stick skillet over medium heat. Add the chopped spinach and sauté for 2-3 minutes until wilted. If using, add the crispy bacon or sausage and sauté for another minute to heat through. Remove from heat and set aside.

        Mix the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, garlic powder, salt, and pepper until thoroughly combined.

          Combine Ingredients: Add in the sautéed spinach and meat (if using), along with the halved cherry tomatoes and shredded cheese. Mix gently to incorporate all ingredients evenly.

            Assemble the Quiche: Pour the egg mixture into the pre-baked hash brown crust, spreading it evenly.

              Bake the Quiche: Return the quiche to the oven and bake for an additional 25-30 minutes, or until the top is set and slightly golden. The edges may brown slightly; that’s okay!
