1 cup dried split peas, rinsed

1 tablespoon olive oil

1 medium onion, chopped

2 garlic cloves, minced

2 carrots, diced

2 stalks celery, diced

1 bay leaf

1 teaspoon dried thyme

4 cups low-sodium chicken or vegetable broth

1 cup diced ham (preferably smoked for extra flavor)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat.

    Add the chopped onion and garlic, sautéing until the onion becomes translucent (about 3-4 minutes).

      Incorporate the diced carrots and celery, cooking for an additional 5 minutes until they start to soften.

        Stir in the rinsed split peas, bay leaf, and dried thyme. Mix well to ensure the peas are coated with the vegetable mixture.

          Pour in the broth and bring the mixture to a boil.

            Reduce the heat to a simmer, cover the pot, and let it cook for about 30-40 minutes, or until the peas are tender, stirring occasionally.

              After the peas have cooked, remove the bay leaf. Use an immersion blender to blend the soup until it reaches your desired consistency. If you like a chunkier texture, blend only half of the soup.

                Stir in the diced ham and let simmer for another 10 minutes. Season with salt and pepper to taste.

                  Serve hot, garnished with fresh parsley on top.
