Spinach Stuffed Chicken Roll-Ups

4 boneless, skinless chicken breasts

2 cups fresh spinach, chopped

1 cup ricotta cheese

½ cup grated Parmesan cheese

½ cup shredded mozzarella cheese

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

1 tablespoon olive oil

Toothpicks or kitchen twine for securing

Instructions
 

Preheat your oven to 375°F (190°C).

    In a skillet over medium heat, add the olive oil. Once hot, add the minced garlic and cook for 1 minute until fragrant.

      Add the chopped spinach and sauté until wilted, about 2-3 minutes. Remove from heat.

        In a mixing bowl, combine the sautéed spinach, ricotta cheese, Parmesan cheese, Italian seasoning, salt, and pepper. Mix until well blended.

          Place each chicken breast between two pieces of plastic wrap and gently pound to about 1/2 inch thickness using a meat mallet. This will help them roll up easily.

            Lay a generous spoonful of the spinach mixture on each chicken breast, spreading it evenly while leaving a small border around the edges.

              Carefully roll up the chicken starting from one side, tucking in the filling as you go. Secure each roll with toothpicks or kitchen twine.

                Place the chicken roll-ups seam-side down in a greased baking dish.

                  If desired, sprinkle additional mozzarella cheese on top for extra cheesy goodness.

                    Cover the dish with aluminum foil and bake for 25 minutes; then remove the foil and bake for an additional 10-15 minutes until the chicken is cooked through and the rolls are golden.

                      Allow to cool for a few minutes before removing the toothpicks or twine.
