2 chicken breasts, sliced

8 oz penne pasta

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon red pepper flakes (adjust for spice level)

1 cup cherry tomatoes, halved

1 cup baby spinach

1 cup heavy cream

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish

Grated Parmesan cheese for serving

Instructions
 

Begin by cooking the penne pasta according to the package instructions until al dente. Once done, reserve 1/2 cup of the pasta water, then drain the pasta and set aside.

    In a large skillet, heat the olive oil over medium heat. Add the sliced chicken breasts and season with salt and pepper. Cook for about 5-7 minutes, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

      In the same skillet, add the minced garlic and red pepper flakes. Sauté for about 30 seconds until fragrant, being careful not to burn the garlic.

        Add the halved cherry tomatoes to the skillet and cook until they start to soften, about 3-4 minutes.

          Stir in the baby spinach and allow it to wilt for a minute.

            Pour in the heavy cream and bring to a gentle simmer. Add the Italian seasoning, and stir to combine.

              Return the cooked chicken to the skillet, mixing it into the sauce. If the sauce is too thick, add reserved pasta water, a little at a time, until desired consistency is achieved.

                Finally, add the cooked penne pasta to the skillet, tossing to coat the pasta with the creamy sauce. Adjust seasoning with salt and pepper if needed.

                  Serve the pasta hot, garnished with fresh basil leaves and a generous sprinkle of grated Parmesan cheese.
