1 ¼ cups water

1 tablespoon rice vinegar

1 teaspoon sugar

½ teaspoon salt

1 pound sushi-grade tuna, diced

2 tablespoons mayonnaise (preferably Japanese mayo)

1 tablespoon sriracha (adjust according to spice preference)

1 avocado, sliced

2 tablespoons green onions, sliced

1 tablespoon sesame seeds

Vegetable oil for frying

Soy sauce for serving

Prepare the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice and water. Bring to a boil, cover, reduce to low heat, and simmer for 20 minutes. Remove from heat and let it sit, covered, for an additional 10 minutes.

    Season the Rice: In a small bowl, mix the rice vinegar, sugar, and salt. Microwave for 20 seconds or until the sugar and salt dissolve. Fluff the cooked rice with a fork and gently fold in the vinegar mixture. Allow the rice to cool entirely.

      Prepare the Spicy Tuna Mix: In a bowl, combine the diced tuna, mayonnaise, and sriracha, mixing well. Taste and adjust the level of sriracha to achieve your desired spice level.

        Form the Crispy Rice: Once the sushi rice is cooled, wet your hands to prevent sticking. Take a small amount of rice (about 2 tablespoons) and form into rectangular shapes. Repeat until all rice is shaped.
