Spicy Shrimp and Avocado Rice Bowl

Ingredients

1 pound large shrimp, peeled and deveined

1 cup brown rice

2 ripe avocados, diced

1 red bell pepper, diced

1 small red onion, finely chopped

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon cayenne pepper (adjust to taste)

1 teaspoon smoked paprika

1 tablespoon soy sauce

1 tablespoon lime juice

Salt and black pepper to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions

Cook the Rice: Start by cooking the brown rice according to the package instructions. Once cooked, fluff with a fork and set aside.

Prepare the Shrimp: In a large bowl, combine the shrimp with cayenne pepper, smoked paprika, soy sauce, lime juice, salt, and pepper. Mix well and let it marinate for about 10 minutes.

Sauté the Shrimp: Heat olive oil in a skillet over medium-high heat. Add minced garlic and sauté for about 30 seconds until fragrant. Then, add the marinated shrimp and cook for about 2-3 minutes on each side, or until the shrimp is pink and cooked through. Remove from heat.

Prepare the Bowl: In serving bowls, start layering the ingredients. Begin with a base of brown rice, then add a generous portion of shrimp.

Add Fresh Ingredients: Top with diced avocados, diced red bell pepper, and chopped red onion. Feel free to adjust the amount of each ingredient based on your preference.

Garnish & Serve: Sprinkle chopped cilantro over the bowls for a fresh touch. Serve with lime wedges on the side for squeezing over the bowls before eating.
