1 lb white fish fillets (like tilapia or cod), cut into chunks

4 cups vegetable or fish broth

1 medium onion, finely chopped

3 cloves garlic, minced

1 inch ginger, grated

2 medium tomatoes, diced

1-2 green chilies, slit (adjust to your spice level)

1 tbsp fish sauce

2 tbsp fresh lime juice

1 tsp turmeric powder

1 tsp chili powder (or to taste)

1 cup coconut milk

1 tsp sugar

Salt to taste

Fresh cilantro leaves for garnish

1 lime, cut into wedges (for serving)

Sauté Aromatics: In a large pot, heat a tablespoon of oil over medium heat. Add the chopped onion and sauté until translucent. Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.

    Add Spices: Sprinkle in the turmeric and chili powder, stirring well to coat the onions. Cook for about 1-2 minutes until the spices are aromatic.
