1.5 lbs pork tenderloin

3 tablespoons harissa paste

2 tablespoons olive oil

4 cloves of garlic, minced

1 tablespoon honey

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1 lemon, zested and juiced

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a small bowl, mix together the harissa paste, olive oil, minced garlic, honey, ground cumin, smoked paprika, salt, pepper, lemon zest, and lemon juice to create a marinade.

      Place the pork tenderloin in a resealable bag or a shallow dish. Pour the marinade over the pork, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.

        Remove the pork from the refrigerator and allow it to come to room temperature for about 15 minutes.

          Heat a large oven-safe skillet over medium-high heat. Once hot, sear the pork tenderloin for approximately 4 minutes on each side, until it forms a nice brown crust.

            Transfer the skillet to the preheated oven and roast for 20-25 minutes or until the pork reaches an internal temperature of 145°F (63°C).

              Remove the skillet from the oven and let the pork rest for 5-10 minutes before slicing.

                Slice the pork tenderloin into medallions and arrange on a serving platter. Drizzle any remaining pan juices over the top and garnish with chopped fresh parsley.
