Ingredients
  

2 cups fresh corn kernels (about 4 ears of corn)

1 ripe mango, diced

1 small red onion, finely chopped

1 medium ripe tomato, diced

1-2 habanero peppers, seeds removed and finely minced (adjust according to heat preference)

1/4 cup fresh cilantro, chopped

Juice of 2 limes

Salt to taste

Optional: 1/2 tsp cumin for an extra depth of flavor

Cook the Corn: If using fresh corn, bring a pot of water to boil. Add the corn and cook for 3-4 minutes until bright yellow and tender. Remove from heat, let cool, and cut the kernels off the cob.

    Prepare the Ingredients: In a large mixing bowl, combine the cooked corn kernels with diced mango, red onion, tomato, and minced habanero peppers.

      Add Flavor: Squeeze the lime juice over the mixture, add salt to taste, and if desired, include the cumin. Mix well until all ingredients are thoroughly combined.
