4 boneless, skinless chicken thighs

1 can (400ml) coconut milk

2 tablespoons olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1-2 red chilies, diced (adjust for spice level)

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Juice of 1 lime

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Stir in the minced garlic and diced chilies, and cook for an additional 2-3 minutes until fragrant.

      Season the chicken thighs with salt, pepper, cumin, and smoked paprika. Add the chicken to the skillet, browning both sides for about 4-5 minutes.

        Pour the coconut milk into the skillet, ensuring the chicken is submerged. Bring the mixture to a gentle simmer.

          Cover and let it cook for 20-25 minutes, or until the chicken is cooked through and tender.

            Remove the lid and stir in the lime juice; let it cook for another 5 minutes to thicken the sauce slightly.

              Taste and adjust seasoning if necessary.

                Garnish with freshly chopped cilantro before serving.
