12 oz spaghetti

2 cups fresh spinach, chopped

1 cup sun-dried tomatoes, chopped (reserve oil)

1 cup heavy cream

1/2 cup Parmesan cheese, grated

2 cloves garlic, minced

2 tbsp olive oil (from sun-dried tomato jar)

1 tsp dried basil

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

Fresh basil leaves for garnish

Cook the Spaghetti: Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the spaghetti and set aside.

    Prepare the Sauce: In a large skillet, heat the olive oil from the sun-dried tomato jar over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.

      Combine Ingredients: Stir in the chopped sun-dried tomatoes and cook for an additional 2-3 minutes. Add the heavy cream, dried basil, and red pepper flakes. Bring to a gentle simmer and cook for another 3-4 minutes, allowing the sauce to thicken slightly.

        Incorporate Spinach: Add the chopped spinach to the sauce and stir until wilted. If the sauce is too thick, gradually add some reserved pasta water until you reach desired consistency.

          Mix in Spaghetti: Toss the cooked spaghetti into the skillet with the sauce. Add the grated Parmesan cheese and season with salt and pepper to taste. Mix well until the spaghetti is coated with the creamy sauce.

            Serve: Plate your spaghetti and garnish with fresh basil leaves. You may also sprinkle extra Parmesan on top for added flavor.
