1 pound boneless, skinless chicken breasts, diced

1 tablespoon olive oil

1 medium onion, chopped

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon ground turmeric

1 teaspoon black pepper

4 cups low-sodium chicken broth

2 carrots, sliced

1 cup celery, chopped

1 cup fresh spinach

1 tablespoon lemon juice

Salt to taste

Fresh cilantro for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.

    Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.

      Add the diced chicken to the pot, seasoning with salt, black pepper, and turmeric. Cook until the chicken is browned, about 5-7 minutes.

        Pour in the chicken broth and bring the mixture to a boil.

          Once boiling, add the sliced carrots and chopped celery. Reduce the heat to a simmer and let cook for 15 minutes until the vegetables are tender.

            Stir in the fresh spinach and lemon juice, cooking for another 3 minutes until the spinach is wilted.

              Taste and adjust seasoning with additional salt if needed.
