Ingredients

4 boneless, skinless chicken thighs

1 cup buttermilk

1 cup all-purpose flour

1 teaspoon smoked paprika

1 teaspoon garlic powder

½ teaspoon onion powder

½ teaspoon cayenne pepper (optional for heat)

Salt and pepper to taste

2 tablespoons olive oil

1 medium onion, thinly sliced

2 cloves garlic, minced

2 cups chicken broth

1 cup heavy cream

Fresh parsley, chopped (for garnish)

Instructions

Marinate the Chicken: In a bowl, combine the buttermilk, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper. Add the chicken thighs, ensuring they are well coated. Cover and refrigerate for at least 1 hour or overnight for more flavor.

Dredge the Chicken: In a shallow dish, mix together the flour, garlic powder, smoked paprika, salt, and pepper. Remove the chicken from the marinade, allowing excess to drip off, and dredge each piece in the flour mixture, shaking off any excess.

Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken thighs and cook for about 5-6 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.

Make the Sauce: In the same skillet, add the sliced onion and sauté for about 5 minutes until translucent. Add minced garlic and cook for an additional minute until fragrant. Pour in the chicken broth and scrape any browned bits off the bottom of the pan.

Create the Creamy Base: Reduce the heat to low and stir in the heavy cream. Allow the mixture to simmer for about 5 minutes until slightly thickened. Season with salt and pepper to taste.

Smother the Chicken: Return the seared chicken thighs to the skillet, spooning the creamy sauce over each piece. Let everything simmer together for another 5 minutes, allowing the chicken to absorb the flavors.

Serve: Transfer the smothered chicken to a serving plate, drizzling the creamy sauce over the top. Sprinkle with chopped parsley for a fresh finish.
