1 lb smoked kielbasa, sliced into rounds

4 medium potatoes, thinly sliced

1 large onion, finely chopped

2 cups shredded cheddar cheese

1 cup sour cream

1 cup milk

2 cloves garlic, minced

1 teaspoon paprika

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet, heat olive oil over medium heat. Add the sliced kielbasa and cook until it’s browned and slightly crispy, about 5-7 minutes. Remove from the skillet and set aside.

      In the same skillet, add the chopped onion and minced garlic. Sauté for 3-4 minutes until the onion becomes translucent.

        In a large mixing bowl, combine the thinly sliced potatoes, sautéed onions and garlic, cooked kielbasa, sour cream, milk, shredded cheddar cheese, paprika, smoked paprika, salt, and black pepper. Mix well to ensure that all ingredients are evenly coated.

          Grease a 9x13-inch casserole dish. Pour the mixture into the prepared dish, spreading it out evenly.

            Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.

              After 30 minutes, remove the foil and continue baking for an additional 15-20 minutes or until the potatoes are tender and the top is bubbling and golden brown.

                Once done, remove from the oven and let it cool for about 5 minutes before serving.

                  Garnish with freshly chopped parsley for a pop of color.
