12 oz fettuccine pasta

8 oz smoked sausage, sliced (andouille works best)

1 tbsp olive oil

1 onion, chopped

3 cloves garlic, minced

1 red bell pepper, diced

1 cup heavy cream

1 cup grated Parmesan cheese

1 tbsp Cajun seasoning (adjust to taste)

Salt and black pepper, to taste

1/4 cup fresh parsley, chopped (for garnish)

Optional: Cracked red pepper flakes, for extra heat

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to the package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

    Sauté the Sausage: In a large skillet over medium heat, add olive oil. Once hot, add the smoked sausage slices and sauté until they are browned and crispy, about 5-7 minutes. Remove sausage from the skillet and set aside.

      Cook the Vegetables: In the same skillet, add the chopped onion and cook until translucent, about 3-4 minutes. Add the minced garlic and diced red bell pepper, cooking for another 2-3 minutes until the vegetables are tender.

        Create the Sauce: Pour in the heavy cream, stirring to combine. Add the grated Parmesan cheese and Cajun seasoning, mixing until the cheese melts and the sauce is smooth. If the sauce is too thick, gradually add a bit of the reserved pasta water until desired consistency is reached.

          Combine Everything: Return the cooked sausage to the skillet and add the drained fettuccine pasta. Toss gently to coat the pasta thoroughly with the sauce, heating everything through (about 2-3 minutes). Season with salt and black pepper to taste.
