1 pound smoked sausage (such as kielbasa or andouille), sliced

4 medium potatoes, diced (such as Yukon gold or red potatoes)

1 large onion, chopped

2 bell peppers (one red, one green), sliced

2 cloves garlic, minced

3 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large mixing bowl, combine the diced potatoes, sliced smoked sausage, chopped onion, and bell peppers.

      Drizzle the olive oil over the mixture. Sprinkle the smoked paprika, dried thyme, salt, and pepper. Toss everything together until well-coated.

        Spread the mixture evenly onto a large baking sheet lined with parchment paper. Ensure the potatoes have a bit of space to crisp up.

          Roast in the preheated oven for 30-35 minutes, stirring halfway through, until the potatoes are golden brown and tender.

            In the last 5 minutes of roasting, add the minced garlic on top of the mixture, stirring lightly to incorporate.

              Once done, remove from the oven and let it cool for a couple of minutes before serving.

                Garnish with fresh chopped parsley for an extra pop of color and flavor.
