8 oz fusilli pasta

4 oz smoked salmon, torn into bite-sized pieces

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/4 red onion, finely chopped

1 cup arugula

1/4 cup capers, rinsed and drained

1/4 cup fresh dill, chopped

1/2 cup Greek yogurt

2 tbsp mayonnaise

1 tbsp lemon juice

1 tsp Dijon mustard

Salt and pepper to taste

Zest of 1 lemon for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fusilli pasta and cook according to package instructions until al dente. Drain the pasta and rinse it under cold water to cool quickly. Set aside.

    Prepare the Dressing: In a mixing bowl, combine the Greek yogurt, mayonnaise, lemon juice, Dijon mustard, salt, and pepper. Whisk until smooth.

      Mix Salad Ingredients: In a large mixing bowl, combine the cooled pasta, smoked salmon, cherry tomatoes, cucumber, red onion, arugula, capers, and dill. Gently toss to combine.

        Add Dressing: Pour the dressing over the pasta salad and carefully mix until everything is well coated. Taste and adjust the seasoning with more salt and pepper if needed.

          Chill and Serve: Cover the salad and refrigerate for at least 30 minutes to let the flavors meld together. Serve chilled, garnished with lemon zest and additional dill if desired.
