200g smoked salmon, thinly sliced

2 tablespoons capers, drained and rinsed

1 tablespoon olive oil

1 tablespoon butter

1 tablespoon fresh dill, chopped

1 tablespoon fresh chives, chopped

1 tablespoon fresh parsley, chopped

1 lemon, zested and juiced

Salt and pepper to taste

Crostini or crackers for serving

Prepare the Crostini: If you're making your own crostini, preheat your oven to 200°C (400°F). Slice a baguette or bread of choice into thin slices, brush both sides with olive oil, and toast in the oven for about 8-10 minutes or until golden brown. Set aside.

    Fry the Capers: In a small skillet, heat the butter and olive oil over medium heat. Add the rinsed capers and fry for 2-3 minutes until they're crispy and start to pop. Remove from heat and set them aside on a paper towel to drain excess oil.
