3-4 lbs chuck roast

2 tablespoons olive oil

4 cloves garlic, minced

1 large onion, quartered

4 carrots, peeled and cut into large pieces

4 potatoes, peeled and cut into cubes

2 cups beef broth

2 tablespoons Worcestershire sauce

2 teaspoons dried thyme

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Sear the Roast: In a large skillet, heat olive oil over medium-high heat. Season the chuck roast with salt, pepper, and paprika. Once the oil is hot, sear the roast on all sides until a golden-brown crust forms, about 4-5 minutes per side.

    Prepare Vegetables: In the bottom of the slow cooker, place the quartered onion, carrots, and potatoes.

      Add Garlic and Seasoning: Spread minced garlic evenly over the vegetables in the slow cooker. Sprinkle dried thyme over the veggies for added flavor.

        Place the Roast: Carefully place the seared roast on top of the vegetables in the slow cooker.

          Mix Liquid Ingredients: In a bowl, combine the beef broth and Worcestershire sauce. Pour this mixture over the roast and vegetables.

            Cook: Cover the slow cooker and cook on low for 8-10 hours or on high for 4-6 hours, until the roast is tender and easily pulled apart with a fork.

              Serve: Once cooked, remove the roast and vegetables from the slow cooker. Let the roast rest for a few minutes before slicing.
