1 pound kielbasa, sliced

2 pounds Yukon gold potatoes, diced

1 medium onion, sliced

3 cloves garlic, minced

2 cups chicken broth

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 teaspoon black pepper

1 cup frozen peas

2 tablespoons olive oil

Salt to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large bowl, combine the sliced kielbasa, diced potatoes, sliced onion, and minced garlic. Stir well to combine.

    Drizzle the olive oil over the mixture and sprinkle on the smoked paprika, dried thyme, black pepper, and salt. Mix until everything is evenly coated.

      Transfer the mixture into the slow cooker and pour in the chicken broth.

        Cover the slow cooker and cook on low for 6-8 hours, or on high for 3-4 hours, until the potatoes are tender.

          About 30 minutes before serving, stir in the frozen peas and let them heat through.

            Once done, taste and adjust seasoning if necessary. Serve hot.
