Slow Cooker Irish Dublin Coddle

Ingredients
  

1 pound pork sausage, sliced

1 pound bacon, chopped

4 medium potatoes, peeled and sliced

3 large carrots, sliced

1 large onion, chopped

4 cups chicken broth

2 tablespoons fresh parsley, chopped

1 tablespoon fresh thyme, chopped

2 bay leaves

Salt and pepper to taste

Instructions
 

In a skillet over medium heat, cook the chopped bacon until crispy. Remove from the skillet and drain on paper towels.

    In the same skillet, add the sliced pork sausage and brown for about 5 minutes. Remove and add to the slow cooker.

      Layer the sliced potatoes, carrots, and chopped onion in the slow cooker over the sausage.

        Sprinkle the crispy bacon on top of the vegetables.

          In a separate bowl, mix the chicken broth with the chopped parsley, thyme, salt, and pepper. Pour this mixture over the layered ingredients in the slow cooker.

            Add the bay leaves to the pot but do not stir; leave the ingredients layered.

              Cover and cook on low for 6-7 hours or on high for 3-4 hours until the vegetables are tender and flavors meld together.

                Once cooked, remove the bay leaves and season with additional salt and pepper if necessary, before serving.
