1 ½ pounds potatoes, peeled and diced

1 medium onion, chopped

3 cloves garlic, minced

2 medium carrots, sliced

2 celery stalks, diced

4 cups chicken or vegetable broth

1 pound German sausages (Bratwurst or Kielbasa), sliced

1 cup heavy cream

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley for garnish

Instructions
 

In the slow cooker, add the diced potatoes, chopped onion, minced garlic, sliced carrots, and diced celery.

    Pour in the chicken or vegetable broth. Stir in the sliced sausages, dried thyme, smoked paprika, salt, and pepper.

      Cover and cook on low for 6-8 hours or on high for 3-4 hours until the vegetables are tender.

        About 30 minutes before serving, stir in the heavy cream to add richness. Adjust seasoning if necessary.

          Once done, use a potato masher to lightly mash some of the potatoes for a creamier texture while leaving some chunks for heartiness.

            Serve hot, garnished with freshly chopped parsley.
