Ingredients

2 lbs beef chuck roast, cut into bite-sized cubes

1 lb baby potatoes, halved

6 cloves garlic, minced

1/2 cup unsalted butter, melted

1 medium onion, diced

1 cup beef broth

2 tbsp Worcestershire sauce

1 tsp dried thyme

1 tsp dried rosemary

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Beef: Season the beef cubes generously with salt and pepper.

Sear the Meat (Optional): In a large skillet over medium-high heat, melt 2 tablespoons of the butter. Add the beef cubes in batches and sear on all sides until browned. This step enhances the flavor but can be skipped for a simpler recipe.

Slow Cooker Setup: In your slow cooker, add the potatoes and diced onion. Place the seared beef cubes on top.

Make Garlic Butter Mixture: In a bowl, combine the melted butter, minced garlic, beef broth, Worcestershire sauce, thyme, and rosemary. Mix well.

Combine: Pour the garlic butter mixture over the beef and potatoes in the slow cooker, making sure everything is evenly coated.

Cooking: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and the potatoes are fork-tender.

Final Touches: Once cooked, taste and adjust seasoning if necessary. Garnish with fresh parsley before serving.
