1 pound ground turkey

8 ounces egg noodles

1 medium onion, chopped

2 cloves garlic, minced

1 cup frozen mixed vegetables (peas, carrots, corn)

1 can (10.5 oz) cream of mushroom soup

1 cup low-sodium chicken broth

1 teaspoon dried thyme

1 teaspoon paprika

1/2 teaspoon black pepper

1/2 cup sour cream

1 cup shredded cheddar cheese

2 tablespoons olive oil

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until the onion becomes translucent (about 3-4 minutes).
