Ingredients

1 lb flank steak, thinly sliced against the grain

2 tablespoons soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

3 tablespoons vegetable oil (divided)

1 large onion, sliced (preferably yellow or white)

2 bell peppers (red and green), sliced

3 cloves garlic, minced

1 inch piece ginger, grated

2 tablespoons black pepper (freshly cracked for additional flavor)

1 tablespoon sesame oil

2 green onions, chopped (for garnish)

Cooked rice (for serving)

Instructions

Marinate the Beef: In a mixing bowl, combine the sliced flank steak, soy sauce, oyster sauce, and cornstarch. Mix well to coat the beef and let it marinate for at least 30 minutes.

Prepare the Vegetables: While the beef is marinating, slice the onions and bell peppers. Set aside.

Heat the Pan: In a large skillet or wok, heat 2 tablespoons of vegetable oil over high heat until shimmering.

Cook the Beef: Add the marinated flank steak to the pan in a single layer. Sear for about 2-3 minutes without stirring until browned. Flip and cook for an additional 2 minutes. Remove the beef from the pan and set aside.

Sauté the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the sliced onions and bell peppers. Stir-fry for about 3-4 minutes until they begin to soften.

Add Aromatics: Stir in the minced garlic and grated ginger, cooking for another minute until fragrant.

Combine Everything: Return the beef to the skillet and sprinkle with black pepper. Drizzle with sesame oil and toss everything together to combine well. Cook for an additional 2 minutes.

Serve: Remove the skillet from heat and transfer the stir-fry to a serving dish. Garnish with chopped green onions. Serve hot over cooked rice.
