Ingredients

4 boneless, skinless chicken breasts

1/4 cup fresh lemon juice (about 2 lemons)

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley for garnish (optional)

Lemon slices for garnish (optional)

Instructions

Marinate the Chicken: In a bowl, whisk together the lemon juice, olive oil, minced garlic, oregano, thyme, paprika, salt, and pepper. Place the chicken breasts in a resealable plastic bag or shallow dish, pour the marinade over the chicken, and seal or cover. Let it marinate in the refrigerator for at least 30 minutes, preferably 1-2 hours for more flavor.

Preheat the Grill or Skillet: If using a grill, preheat it to medium-high heat. If using a skillet, heat a tablespoon of olive oil in a large skillet over medium heat.

Cook the Chicken: Remove the chicken from the marinade, letting any excess drip off. Grill the chicken for about 6-7 minutes per side, or until fully cooked (internal temperature should reach 165°F/75°C). If using a skillet, cook the chicken for approximately 5-6 minutes per side until golden and cooked through.

Rest and Slice: Once cooked, transfer the chicken to a cutting board and let it rest for 5 minutes. This helps retain its juices. Then, slice the chicken into strips or serve whole.

Serve: Arrange the chicken on a serving platter and garnish with fresh parsley and lemon slices if desired. Pair with steamed vegetables or a light salad for a complete meal.
