4 slices of soft baguette or crusty bread

3 large eggs

1/2 cup minced beef or chicken (cooked)

1 small onion, finely chopped

1 tablespoon chili sauce

1 tablespoon mayonnaise

1 teaspoon soy sauce

Salt and pepper to taste

2 tablespoons butter

Fresh coriander or parsley for garnish

Instructions
 

In a mixing bowl, crack the eggs and whisk them until well combined. Season with salt and pepper.

    Add the minced meat, finely chopped onion, chili sauce, and soy sauce to the eggs, stirring until everything is coated with the egg mixture.

      Heat a non-stick skillet over medium heat and add 1 tablespoon of butter.

        Once the butter has melted and is sizzling, pour half of the egg and meat mixture onto the skillet, spreading it out flat into a rectangular shape.

          Place two slices of bread directly on top of the mixture, ensuring they absorb the egg. Flip the bread over so the egg side is facing up.

            Cook for 3-4 minutes until the bottom is golden brown and crispy. Use a spatula to gently flip the sandwich over, adding the remaining tablespoon of butter if needed for cooking.

              Cook the other side for another 3-4 minutes until it’s crispy and the egg is fully cooked.

                Remove from heat and repeat steps 4-7 with the remaining bread and egg mixture.

                  Once both Roti Johns are ready, cut them into halves or quarters.

                    Drizzle the mayonnaise on top and garnish with fresh coriander or parsley before serving.
