2 cups dried navy beans (or any small white beans)

6 cups water (for soaking)

1 medium onion, diced

1/4 cup molasses

1/4 cup brown sugar

1 tablespoon Dijon mustard

2 tablespoons apple cider vinegar

1 teaspoon smoked paprika

1/2 teaspoon black pepper

1/2 teaspoon salt

1/4 teaspoon cayenne pepper (optional, for a spicy kick)

3 slices of thick-cut bacon, chopped (or 1/2 cup smoked tempeh for a vegetarian option)

1 cup vegetable broth

Soak the Beans: Place the dried navy beans in a large bowl and cover them with 6 cups of water. Allow them to soak overnight to rehydrate. If you're short on time, you can instead bring them to a boil for 5 minutes, then remove from heat and let them sit for 1 hour. Drain and rinse the beans before using.

    Preheat Oven: Preheat your oven to 325°F (165°C).

      Cook the Bacon: In a large oven-safe pot or Dutch oven, cook the chopped bacon over medium heat until it’s crispy and the fat has rendered (about 5-7 minutes). If using tempeh, sauté it in a little olive oil until crisp instead.

        Sauté the Onions: Add the diced onion to the pot with the bacon drippings and sauté until translucent and softened, about 3-4 minutes.

          Combine Ingredients: Stir in the soaked and drained beans, molasses, brown sugar, Dijon mustard, apple cider vinegar, smoked paprika, black pepper, salt, cayenne pepper (if using), and vegetable broth. Mix well to combine all ingredients.

            Bake the Beans: Cover the pot with a lid and place it in the preheated oven. Bake for 2 to 2.5 hours, checking occasionally to ensure there is enough liquid. If it seems dry, add a little more broth or water.

              Finish and Serve: Once the beans are tender and the sauce is thick, remove from the oven. Let sit for a few minutes before serving.
