Ingredients

1 pound large shrimp, peeled and deveined

1 tablespoon olive oil

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper, to taste

8 small corn tortillas

1 cup red cabbage, finely shredded

1/2 cup carrot, grated

1/2 cup pineapple, diced

1/4 cup fresh cilantro, chopped

1 lime, juiced

2 tablespoons honey

1 avocado, sliced

Optional: hot sauce for serving

Instructions

Prepare the Shrimp Marinade: In a medium bowl, combine olive oil, chili powder, cumin, garlic powder, smoked paprika, salt, and pepper. Add the shrimp and toss to coat. Let it marinate for at least 15 minutes.

Make the Tropical Slaw: In another bowl, mix together the shredded cabbage, grated carrot, diced pineapple, and chopped cilantro. In a small separate bowl, whisk together lime juice and honey; pour it over the slaw mixture and toss until well combined.

Cook the Shrimp: Heat a large skillet over medium-high heat. Add the marinated shrimp in a single layer and cook for 2-3 minutes on each side or until they turn pink and are cooked through.

Heat the Tortillas: In a separate pan, warm the corn tortillas over medium heat for about 30 seconds on each side until they are pliable.

Assemble the Tacos: Place a few shrimp on each tortilla, top with a generous amount of tropical slaw, and add slices of avocado. Drizzle with hot sauce if desired.

Serve: Present your tacos immediately while they are warm.
