8 large shrimp, peeled and deveined

8 rice paper wrappers

1 cup vermicelli noodles, cooked and drained

1 cup fresh mint leaves

1 cup fresh cilantro leaves

1 cucumber, julienned

1 medium carrot, julienned

1 avocado, sliced

½ cup hoisin sauce (for dipping)

2 teaspoons lime juice

Salt and pepper to taste

Prepare the Shrimp: In a pot of boiling water, add the shrimp and cook for about 2-3 minutes until they turn pink and opaque. Drain and set aside to cool. Once cooled, cut each shrimp in half lengthwise.

    Prepare the Vegetables: While the shrimp are cooking, wash and julienne the cucumber and carrot. Slice the avocado and set aside.

      Prepare the Noodles: If not already done, cook the vermicelli noodles according to package instructions, then rinse under cold water and drain.

        Soak the Rice Paper Wrappers: Fill a large shallow dish with warm water. Working one at a time, dip a rice paper wrapper into the water for about 10-15 seconds until pliable. Lay it flat on a clean surface.

          Assemble the Rolls: In the center of the rice paper, place a small handful of vermicelli noodles, a few pieces of shrimp (cut side up), a couple of mint and cilantro leaves, followed by a few pieces of cucumber, carrot, and avocado.

            Roll the Wrapper: Fold the bottom of the rice paper up over the filling, then fold in the sides tightly. Roll it away from you to form a tightly sealed spring roll. Repeat with the remaining wrappers and filling ingredients.

              Make the Dipping Sauce: In a small bowl, combine hoisin sauce with lime juice. Stir to mix well and adjust seasoning with salt and pepper if needed.

                Serve: Arrange the packed summer rolls on a serving platter and serve with the dipping sauce on the side.
