1 lb large shrimp, peeled and deveined

1 cup sushi rice

1 ½ cups water

1 ripe avocado, sliced

1 cup diced cucumber

1 cup shredded carrots

2 radishes, thinly sliced

2 green onions, sliced

2 tablespoons soy sauce

1 tablespoon sesame oil

1 teaspoon sriracha (optional for spice)

1 tablespoon sesame seeds

1 tablespoon chopped cilantro (for garnish)

Sea salt to taste

Prepare the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear. In a medium saucepan, combine the rice and water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes until the water is absorbed. Remove from heat and let it sit, covered, for another 10 minutes. Fluff with a fork and set aside.

    Cook the Shrimp: In a skillet over medium heat, add the shrimp and cook for about 2-3 minutes per side, or until they turn pink and opaque. Remove from heat and let cool slightly.

      Marinate the Shrimp: In a bowl, combine soy sauce, sesame oil, and sriracha (if using). Add the cooked shrimp and toss to coat well. Let it marinate for about 10 minutes for the flavors to meld.

        Prepare the Toppings: While the shrimp is marinating, slice the avocado, cucumber, and radishes. Prepare the shredded carrots and green onions.

          Assemble the Poke Bowl: Start by placing a scoop of sushi rice at the bottom of each serving bowl. Top with the marinated shrimp, followed by the avocado slices, cucumber, shredded carrots, and radishes.

            Garnish: Sprinkle sesame seeds and sliced green onions over the top. Finish with chopped cilantro and a pinch of sea salt for extra flavor.
