1 cup orzo pasta

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

3 cloves garlic, minced

1 small shallot, finely chopped

1 cup white wine (Chardonnay or Sauvignon Blanc)

1 cup heavy cream

1 cup vegetable broth

1 cup cherry tomatoes, halved

1/2 cup fresh spinach, roughly chopped

1 tablespoon lemon juice

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper to taste

1/4 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Orzo: In a large pot, bring salted water to a boil and cook the orzo according to the package instructions until al dente, about 8-10 minutes. Drain and set aside.

    Sauté the Shrimp: In a large skillet over medium heat, heat the olive oil. Add the garlic and shallots, sautéing for about 2 minutes until fragrant. Add the shrimp and season with salt, pepper, and Italian herbs. Cook for 2-3 minutes on each side until the shrimp is pink and opaque. Remove shrimp from the skillet and set aside.

      Make the Wine Sauce: In the same skillet, pour in the white wine, scraping the bottom of the pan to deglaze. Allow it to simmer for 3-4 minutes until reduced by half.

        Add Cream and Broth: Reduce the heat to low and stir in the heavy cream and vegetable broth. Let it simmer gently for an additional 5 minutes.

          Combine Ingredients: Add the cooked orzo, cherry tomatoes, and spinach to the cream sauce. Stir well to combine and ensure the orzo is coated in the sauce. Return the shrimp to the skillet and mix everything together.

            Finish it Off: Add the lemon juice and grated Parmesan cheese. Stir until the cheese is melted and the dish is creamy. Adjust seasoning with salt and pepper as desired.

              Serve: Garnish with fresh parsley and more Parmesan cheese if you like. Serve immediately for a delightful and creamy seafood dish.
