Ingredients

1 lb large shrimp, peeled and deveined

1 lb baby potatoes, halved

2 ears of corn, cut into 1-inch pieces

1/2 lb smoked sausage, sliced into rounds

3 tablespoons olive oil

2 teaspoons Old Bay seasoning

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon cayenne pepper (optional for extra heat)

Salt and pepper to taste

2 tablespoons lemon juice

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.

In a large bowl, combine the halved baby potatoes, sliced sausage, olive oil, Old Bay seasoning, garlic powder, paprika, cayenne pepper, salt, and pepper. Toss until the potatoes and sausage are well coated with the seasoning.

Spread the mixture onto one side of the prepared baking sheet in a single layer.

Bake in the preheated oven for 15 minutes.

While the potatoes and sausage roast, prepare the shrimp and corn. In another bowl, combine the corn pieces and shrimp with lemon juice and a pinch of salt and pepper.

After 15 minutes, carefully remove the baking sheet from the oven and add the corn and shrimp to the other side of the pan.

Return the sheet pan to the oven and bake for an additional 10-12 minutes, or until the shrimp is pink and cooked through, and the potatoes are tender.

Once done, remove the pan from the oven and let it cool for a couple of minutes.

Garnish with chopped parsley and serve with lemon wedges on the side for an extra zesty flavor.
