Sheet Pan Salmon and Asparagus with Crispy Potatoes

4 salmon fillets

1 bunch asparagus, trimmed

3 medium potatoes, diced into bite-sized pieces

3 tablespoons olive oil, divided

2 cloves garlic, minced

1 lemon, zested and juiced

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped for garnish

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large bowl, toss the diced potatoes with 2 tablespoons of olive oil, minced garlic, smoked paprika, salt, and pepper until evenly coated. Spread the potatoes in a single layer on a large baking sheet.

      Roast the potatoes in the preheated oven for 15 minutes.

        While the potatoes are roasting, prepare the salmon and asparagus. In another bowl, combine the asparagus with the remaining tablespoon of olive oil, lemon zest, dried thyme, salt, and pepper. Toss to coat.

          After 15 minutes of cooking, remove the baking sheet from the oven and stir the potatoes. Add the asparagus to the sheet, spreading it evenly alongside the potatoes.

            Place the salmon fillets in between the asparagus and drizzle them with lemon juice. Season the salmon with salt, pepper, and additional lemon zest if desired.

              Return the baking sheet to the oven and roast everything together for an additional 12-15 minutes, or until the salmon flakes easily with a fork and the potatoes are golden and crispy.

                Once cooked, remove from the oven and garnish with fresh parsley before serving.
