1 lb kielbasa, sliced into 1-inch thick rounds

1 bell pepper (any color), sliced into strips

1 medium zucchini, sliced into half-moons

1 red onion, sliced into wedges

3 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon paprika

1 teaspoon dried thyme

1 teaspoon black pepper

Salt to taste

Fresh parsley, chopped for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    On a large sheet pan, arrange the kielbasa slices in a single layer. Using a sharp knife, make several evenly spaced cuts into the top of each kielbasa slice, making sure not to cut all the way through (this will create a hasselback effect).

      In a large bowl, combine bell pepper, zucchini, red onion, and minced garlic. Drizzle with olive oil and sprinkle paprika, thyme, black pepper, and salt. Toss to coat evenly.

        Add the veggie mixture around the kielbasa on the sheet pan, ensuring everything is spread out evenly without overcrowding.

          Bake in the preheated oven for 25-30 minutes, or until the kielbasa is heated through and the vegetables are tender and slightly caramelized.
