1 lb (450g) boneless, skinless chicken thighs, cut into bite-sized pieces

1/2 cup cornstarch

1/4 cup sesame seeds, toasted

3 tablespoons vegetable oil

2 cloves garlic, minced

1-inch piece ginger, minced

1/4 cup soy sauce (or tamari for gluten-free)

2 tablespoons honey

2 tablespoons rice vinegar

1 teaspoon sesame oil

1/4 teaspoon red pepper flakes (optional for heat)

2 green onions, thinly sliced (for garnish)

Cooked jasmine rice, for serving

Instructions
 

In a large bowl, toss the chicken pieces with cornstarch until evenly coated. This will give the chicken a crispy texture when cooked.

    Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the coated chicken pieces in a single layer (you may need to do this in batches) and cook for about 5-6 minutes, turning occasionally, until golden brown and cooked through. Remove from the skillet and set aside.

      In the same skillet, add the minced garlic and ginger. Sauté for about 30 seconds until fragrant.

        In a small bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, and red pepper flakes (if using). Pour this mixture into the skillet with the garlic and ginger, stirring to combine.

          Bring the sauce to a gentle simmer and let it cook for about 2-3 minutes until slightly thickened.

            Add the cooked chicken back into the skillet, tossing to coat the chicken in the sauce. Cook for an additional 2-3 minutes to reheat the chicken and allow it to absorb the flavors.

              Once well-mixed, sprinkle the toasted sesame seeds over the chicken and give it a final stir.

                Serve the sesame chicken over a bed of fluffy jasmine rice and garnish with sliced green onions.
