Seafood Pasta Salad

Ingredients
  

8 oz fusilli pasta

1 cup shrimp, peeled and deveined

1 cup calamari rings

1 cup cooked crab meat (or imitation crab)

1/2 cup cherry tomatoes, halved

1/2 cup cucumber, diced

1/4 cup red bell pepper, diced

1/4 cup red onion, finely chopped

1/4 cup fresh parsley, chopped

1/2 cup black olives, pitted and sliced

1/3 cup olive oil

3 tbsp lemon juice

2 tsp Dijon mustard

1 tsp dried oregano

1/2 tsp garlic powder

Salt and pepper to taste

Cook the Pasta: In a large pot of boiling salted water, cook the fusilli pasta according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

    Prepare the Seafood: In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the shrimp and calamari, seasoning with a pinch of salt and pepper. Cook for about 3-4 minutes until shrimp are pink and opaque, and calamari is tender. Remove from heat and let cool.

      Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, dried oregano, garlic powder, salt, and pepper until emulsified.

        Combine Ingredients: In a large mixing bowl, combine the cooled pasta, shrimp, calamari, crab meat, cherry tomatoes, cucumber, red bell pepper, red onion, parsley, and black olives.

          Dress the Salad: Pour the dressing over the pasta and seafood mixture. Toss gently until everything is evenly coated.

            Chill: Cover and refrigerate for at least 30 minutes to allow the flavors to meld. For best results, let it chill for a couple of hours.
