4 large eggs

1 cup sausage meat (pork or any preferred meat)

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

2 tablespoons fresh parsley, finely chopped

1 tablespoon fresh chives, finely chopped

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1 cup all-purpose flour

2 large eggs (for coating)

Boil the Eggs: Place the eggs in a saucepan and cover them with cold water. Bring the water to a boil and then simmer for 6 minutes for a slightly runny yolk or 8 minutes for firmer yolks. Remove and place in an ice bath to cool.

    Prepare the Sausage Mixture: In a mixing bowl, combine the sausage meat, grated Parmesan, chopped parsley, chives, garlic powder, onion powder, salt, and pepper. Mix thoroughly until combined.

      Peel the Eggs: Once the boiled eggs are cool, carefully peel them under running water to prevent any breakage.

        Coat the Eggs: Take a handful of the sausage mixture and flatten it in your palm. Wrap it around one boiled egg, ensuring an even layer. Repeat the process until all eggs are coated.

          Prepare for Breading: Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs.

            Bread the Scotch Eggs: First, roll each coated egg in the flour, then dip in the beaten eggs, and finally roll in the breadcrumbs until fully coated.

              Fry the Eggs: In a deep skillet or frying pan, heat vegetable oil over medium heat until it shimmers (about 350°F or 175°C). Carefully add the Scotch eggs in batches, frying until golden brown and crispy, about 4-5 minutes per side. Drain on paper towels.
