1 pound large sea scallops, cleaned and patted dry

2 tablespoons olive oil

2 tablespoons unsalted butter

Zest of 1 orange

Zest of 1 lime

Juice of 1/2 orange

Juice of 1/2 lime

3 cloves garlic, minced

1 tablespoon fresh parsley, chopped

1 tablespoon fresh cilantro, chopped

1 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Microgreens or extra herbs for garnish

Prep the Scallops: Ensure the scallops are completely dry. Season both sides with salt and pepper. This is crucial for achieving a good sear.

    Heat the Pan: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the butter and let it melt, swirling to combining the oils.

      Sear the Scallops: Carefully place the scallops in the pan, ensuring they’re not crowded. Sear them for about 2-3 minutes on one side until a golden crust forms. Use tweezers or tongs to turn them over.

        Add Flavor: After flipping the scallops, add minced garlic, orange zest, lime zest, orange juice, and lime juice to the pan. Cook for another 2-3 minutes, basting the scallops with the pan juices.
