1 lb beef chuck roast, cut into chunks

1 onion, diced

4 cloves garlic, minced

1 cup beef broth

1 tablespoon ranch seasoning mix

1 tablespoon au jus gravy mix

2 cups egg noodles

2 cups mixed vegetables (carrots, peas, and bell peppers)

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Brown the Beef: In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Add the beef chunks and sear them on all sides until browned (about 5-7 minutes). Remove the beef and set aside.

    Sauté Aromatics: In the same skillet, add the diced onion and minced garlic. Sauté for about 3 minutes until the onion is translucent and fragrant.

      Combine Ingredients: Return the beef to the skillet. Sprinkle the ranch seasoning and au jus gravy mix over the beef. Pour in the beef broth, ensuring the beef is submerged. Bring to a gentle simmer and cover.

        Slow Cook: Reduce the heat to low and let the beef cook for 1.5 to 2 hours, stirring occasionally, until the meat is tender and easily shreds.

          Cook Noodles: In the last 15 minutes of cooking, bring a pot of salted water to a boil. Cook the egg noodles according to package instructions. Drain and set aside.

            Add Vegetables: Once the beef is tender, add in the mixed vegetables. Stir to incorporate and cook for an additional 5-10 minutes until the vegetables are tender.
