Ingredients
  

2 cups cooked chicken, shredded

4 slices of crispy bacon, crumbled

1 cup cherry tomatoes, halved

1/2 cup romaine lettuce, chopped

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1 teaspoon lemon juice

Salt and black pepper, to taste

4 slices of whole grain bread (or your choice of bread)

Optional: Avocado slices, for garnish

Instructions
 

In a large mixing bowl, combine the shredded chicken, crumbled bacon, halved cherry tomatoes, and chopped romaine lettuce.

    In a separate small bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, salt, and pepper until smooth and creamy.

      Pour the dressing over the chicken mixture and gently mix until everything is well coated.

        Taste and adjust seasoning if necessary.

          Toast the slices of bread lightly if desired.

            Spoon generous amounts of the BLT chicken salad onto two slices of bread.

              If using, add avocado slices on top of the chicken salad for extra creaminess.

                Top with the remaining two slices of bread, press down gently, and cut the sandwiches in half.

                  Serve immediately with a side of chips or a fresh salad.
