Ingredients

2 cups large shell pasta

1 pound ground beef

1 small onion, finely chopped

3 cloves garlic, minced

1 can (15 oz) diced tomatoes with herbs

1 tablespoon tomato paste

1 teaspoon dried oregano

1 teaspoon smoked paprika

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 cups fresh spinach

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

2 tablespoons olive oil

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the shell pasta and cook according to package instructions until al dente. Drain and set aside.

Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until softened. Stir in the minced garlic and cook for another minute until fragrant.

Brown the Beef: Increase the heat to medium-high and add the ground beef to the skillet. Cook, breaking it apart with a spatula, until browned and cooked through (about 6-8 minutes). Season with salt and pepper.

Add the Tomatoes: Stir in the diced tomatoes (with their juice), tomato paste, oregano, smoked paprika, and red pepper flakes (if using). Bring the mixture to a simmer, reducing heat to medium-low. Let it cook for about 5 minutes to combine the flavors.

Incorporate Spinach and Pasta: Add the fresh spinach to the beef-tomato mixture and let it wilt for about 2 minutes. Gently fold in the cooked shell pasta until evenly coated with the sauce.

Cheese it Up: Sprinkle the mozzarella and Parmesan cheese over the pasta and stir until just melted and evenly mixed.

Serve: Taste and adjust seasoning if needed. Serve hot, garnished with extra cheese or fresh herbs if desired.
