4 large croissants

8 ounces sliced ham (preferably honey or smoked ham)

8 ounces shredded Gruyère cheese (or Swiss cheese)

1/4 cup Dijon mustard

1/4 cup mayonnaise

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon honey

Salt and pepper to taste

1 egg (for egg wash)

Sesame seeds (optional, for topping)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a small bowl, combine the Dijon mustard, mayonnaise, honey, fresh thyme, salt, and pepper. Mix until well blended.

      Slice each croissant in half horizontally without cutting all the way through, creating a pocket.

        Spread a generous amount of the mustard-mayo mixture on the inside of each croissant.

          Layer two slices of ham followed by a handful of shredded Gruyère cheese in each croissant. Press down slightly to ensure they hold their shape.

            Close the croissants and place them seam-side down on a baking sheet lined with parchment paper.

              In a small bowl, whisk the egg and brush the mixture lightly over the tops of each croissant. If desired, sprinkle sesame seeds on top for added texture and flavor.

                Bake in the preheated oven for 15-20 minutes, or until the croissants are golden brown and the cheese is melted and bubbly.

                  Remove from the oven and allow to cool slightly before serving.
