Ingredients
  

1 pound Italian sausage (mild or spicy, based on preference)

1 medium onion, diced

3 cloves garlic, minced

3 medium carrots, sliced

2 celery stalks, chopped

4 cups chicken broth

1 can (14.5 ounces) diced tomatoes, with juice

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1 bay leaf

9 ounces refrigerated tortellini (cheese or meat filling)

2 cups fresh spinach (or kale)

Salt and pepper to taste

Grated Parmesan cheese (for serving)

Fresh parsley or basil, chopped (for garnish)

Olive oil (for cooking)

Instructions
 

In a large pot, heat a drizzle of olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent.

    Add the minced garlic and continue to sauté for another minute, stirring frequently to prevent burning.

      Add the sliced carrots and chopped celery, cooking until they begin to soften (about 5 minutes).

        Remove the casings from the Italian sausage and crumble it into the pot. Cook until browned and no longer pink, breaking it apart with a spatula (about 6-8 minutes).

          Stir in the diced tomatoes (with juice), chicken broth, dried Italian herbs, and bay leaf. Bring the mixture to a simmer.

            Add the tortellini and cook according to the package instructions (usually about 3-5 minutes), until the tortellini are tender.

              Once the tortellini are cooked, stir in the fresh spinach, and let it wilt in the hot soup for 2-3 minutes.

                Season the soup with salt and pepper to taste. Remove the bay leaf before serving.

                  Ladle the soup into bowls and sprinkle with grated Parmesan cheese and fresh herbs for garnish.
