Ingredients
  

1 lb Italian sausage (mild or spicy, according to your preference)

1 medium onion, diced

2 cloves garlic, minced

4 cups chicken broth

1 (14.5 oz) can diced tomatoes (with juices)

2 cups fresh spinach (or kale)

1 package (9 oz) cheese tortellini

1 tsp Italian seasoning

Salt and pepper to taste

1 tablespoon olive oil

Grated Parmesan cheese (for serving)

Fresh basil leaves (for garnish, optional)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 4-5 minutes.

    Add the minced garlic and Italian sausage, breaking the sausage apart with a spoon. Cook until the sausage is browned and no longer pink, about 6-8 minutes.

      Drain excess fat if necessary, then pour in the chicken broth and diced tomatoes (with juices). Stir to combine.

        Bring the mixture to a boil, then reduce to a simmer and add the Italian seasoning, salt, and pepper to taste. Let it simmer for about 10 minutes to allow the flavors to blend.

          Stir in the tortellini and cook according to package instructions, usually around 3-5 minutes, until they float to the top and are tender.

            Finally, add the fresh spinach, stirring until it wilts, about 2 minutes. Remove from heat.

              Serve hot, garnished with grated Parmesan cheese and fresh basil leaves if desired. Enjoy!
