12 fresh jalapeño peppers

1 pound ground sausage (hot or mild, depending on preference)

1 cup cream cheese, softened

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon onion powder

½ teaspoon black pepper

¼ teaspoon salt

1 tablespoon chopped fresh chives (optional, for garnish)

12 slices of bacon (optional, for wrapping)

Prep the Jalapeños: Preheat your oven to 375°F (190°C). Slice the jalapeños in half lengthwise, and remove the seeds and membranes (use gloves for safety). This will help reduce the heat and make them easier to stuff.

    Prepare the Filling: In a mixing bowl, combine the ground sausage, cream cheese, cheddar cheese, garlic powder, smoked paprika, onion powder, black pepper, and salt. Mix well until all ingredients are thoroughly combined.

      Stuff the Peppers: Use a small spoon or piping bag to carefully fill each jalapeño half with the sausage mixture, packing it in generously.
