Ingredients
  

1 lb Italian sausage (mild or spicy, based on preference)

1 tablespoon olive oil

1 onion, diced

3 cloves garlic, minced

3 carrots, sliced

2 stalks celery, diced

4 cups vegetable broth

2 cups kale, chopped

1 can (14 oz) diced tomatoes, undrained

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

Grated Parmesan cheese (for garnish)

Instructions
 

In a large pot, heat olive oil over medium heat.

    Remove the sausage from its casing and add it to the pot. Cook until browned, breaking it up with a wooden spoon, about 5-7 minutes.

      Add the diced onion, minced garlic, carrots, and celery to the pot. Sauté for an additional 5 minutes, or until the vegetables are tender.

        Pour in the vegetable broth and add the diced tomatoes (with their juices). Stir to combine.

          Blend in the dried oregano and thyme; bring to a simmer and let it cook for about 10 minutes.

            Add the chopped kale to the pot and cook for another 5 minutes, until the kale is wilted.

              Season the soup with salt and pepper to taste, adjusting according to preference.

                Serve hot, garnished with a sprinkle of grated Parmesan cheese on top.
