Sausage and Egg Breakfast Rolls

4 large breakfast sausages

4 large eggs

1 cup shredded cheddar cheese

4 large soft tortillas

1/2 cup diced bell pepper (any color)

1/4 cup chopped green onions

1 teaspoon garlic powder

Salt and pepper, to taste

1 tablespoon olive oil

Hot sauce (optional, for serving)

Instructions
 

Start by cooking the sausages in a skillet over medium heat until browned and cooked through, about 8-10 minutes. Remove from the skillet and let them rest for a few minutes before slicing them into bite-sized pieces.

    In the same skillet, add olive oil and sauté the diced bell pepper until softened, about 3-4 minutes. Then add the garlic powder, salt, and pepper, mixing well.

      Reduce the heat to low and crack the eggs into the pan, scrambling them gently. Cook until the eggs are just set, about 3-4 minutes, then stir in the cheese until melted. Add the sliced sausage and mix to combine.

        Take a tortilla and place a generous portion of the sausage and egg mixture in the center. Sprinkle some chopped green onions on top.

          Fold the sides of the tortilla inward and then roll it up tightly from the bottom to the top, like a burrito. Repeat for the remaining tortillas.

            If desired, place the rolls seam-side down in the skillet and cook on medium heat until golden brown and crispy, about 2-3 minutes on each side. This step is optional but adds extra texture.

              Slice each roll in half diagonally for a more appealing presentation. Serve warm with hot sauce on the side.
