1 pound breakfast sausage (italian or spicy, based on preference)

1 cup fresh spinach, chopped

6 large eggs

1 cup whole milk

1 cup shredded cheddar cheese

1 cup diced bell peppers (red and green mix)

1 small onion, finely chopped

1 teaspoon garlic powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon smoked paprika

1 cup cubed day-old bread (sourdough or whole wheat for added flavor)

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or butter.

    In a large skillet over medium heat, add the breakfast sausage. Cook, breaking it into small pieces until browned and fully cooked, about 5-7 minutes. Drain excess fat if necessary.

      Stir in the chopped spinach, bell peppers, and onions with the cooked sausage. Sauté for an additional 3-4 minutes until the vegetables are slightly tender. Set aside to cool for a few minutes.

        In a mixing bowl, whisk together the eggs, milk, garlic powder, salt, black pepper, and smoked paprika until well combined.

          Add the cooled sausage and vegetable mixture to the egg mixture, followed by the cubed bread and 3/4 cup of shredded cheddar cheese. Gently fold everything together until evenly combined.

            Pour the mixture into the prepared baking dish, spreading it evenly. Top with the remaining 1/4 cup of cheddar cheese.

              Bake in the preheated oven for 30-35 minutes or until the casserole is set in the center and golden brown on top.

                Once baked, remove from the oven and let it rest for about 5 minutes before slicing.
