500g chicken breast, cut into bite-sized pieces

1 tablespoon cornstarch

1/2 teaspoon baking powder

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon white pepper

1/2 cup all-purpose flour

Oil for frying

2 cloves garlic, minced

1 red bell pepper, sliced

2 green onions, chopped

1 tablespoon sesame oil

1 teaspoon chili flakes (optional)

Fresh cilantro leaves for garnish

Instructions
 

In a mixing bowl, combine chicken pieces, cornstarch, baking powder, salt, black pepper, and white pepper. Toss until the chicken is evenly coated. Allow to marinate for 15-20 minutes.

    Dredge the marinated chicken pieces in the all-purpose flour, shaking off any excess flour.

      Heat oil in a large pan or wok over medium-high heat. Once the oil is hot, carefully add the chicken pieces in batches, frying them until golden brown and crispy, about 3-4 minutes per side. Use a slotted spoon to remove the chicken and let it drain on paper towels to remove excess oil.

        In the same pan, discard excess oil, leaving about 2 tablespoons. Add minced garlic and sauté for 30 seconds until fragrant.

          Add the sliced red bell pepper and cook for an additional 2 minutes until slightly softened.

            Return the fried chicken to the pan and drizzle over the sesame oil. Toss everything together to combine, adding chili flakes if desired for an extra kick.

              Finish with a sprinkle of chopped green onions and toss gently.

                Serve hot, garnished with fresh cilantro leaves.
